Lactation Cookies
These tasty morsels came into my life after my first son Roland. I was struggling with my milk supply and my mom sent me this recipe. I don’t even know where this cookie recipe originated from as I only have a cut & paste recipe on a 10 person deep email chain. So I guess I’ll claim them as my own lol. These soon became my husband’s favorite cookies and I have continued to make these for him well after my breastfeeding days were gone…in fact I think a batch of these are in order! My husband will even bring a bag of these bad boys to work and pass them out to the guys. Lol. It’s the brewer’s yeast, flax seed meal and oatmeal that contribute to increasing a mother’s milk supply. Maybe it’s just an old wives tale. But for now, I will go ahead and take any excuse to eat a delicious cookie.
Ingredients:
- 1 cup of sugar
- 1 cup of butter
- 1 cup of packed brown sugar
- 4 Tbsp of water
- 2 Tbsp of flax seed meal
- 2 eggs
- 1 tsp of vanilla
- 2 cups of flour
- 1 tsp of baking soda
- 1 tsp of salt
- 3 cups of steel cut oats
- 1 cup of chocolate chips
- 4 Tbsp of brewer’s yeast
Instructions:
- Preheat oven to 350
- Mix the flaxseed and water and let sit for 3-5 minutes
- Cream the butter, sugar and brown sugar
- Add eggs and mix well
- Add flaxseed mix and vanilla and mix well
- Sift together flour, brewer’s yeast, baking soda and salt
- Add dry ingredients to butter mix
- Thoroughly stir in oats and chocolate chips
- Scoop onto baking sheet (1″ balls)
- Bake for 12 minutes
- Allow cookies to set for a few minutes before removing from baking sheet
Grab a cold glass of milk and a nice warm gooey cookie and enjoy!
