Mom’s Oat Muffins
If you are looking for a delicious muffin packed full of healthy ingredients then look no further…my Mama’s oat muffins are healthy and insanely good. And how can you beat a healthy muffin that your husband and your toddler love? I didn’t separate the recipe into the typical ingredient/instruction format because it’s just easier to mingle the two together. Without further ado…
Mix “wet” ingredients in a bowl and let sit 30 minutes:
- 1 1/4 cup rolled oats
- 1/4 cup flax meal
- 1 1/2 cup buttermilk
- 1/2 cup baby food prunes
- 1/4 cup brown sugar
- 1 cup coarsely chopped dried fruit
Add to wet ingredients:
- 1 Egg
- 1/4 cup oil
- 1 cup coarsely chopped nuts
Mix together “dry” ingredients in small bowl:
- 3/4 cup flour
- 1/2 tsp salt
- 1 1/4 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
Stir dry ingredients into wet ingredients until just mixed (do not over mix).
Spray muffin tin with oil and fill mixture to the brim. You do not need to leave room for rising.
Sprinkle coarse raw sugar on top.
Bake at 400degrees for 20-23 minutes.
Couple Notes:
This recipe is very flexible. You can substitute several ingredients to accommodate what you have in your pantry. I generally add 1-2 mashed bananas to the recipe but they aren’t necessary. For the nuts I usually use pumpkin seeds, sunflower seeds (raw and/or toasted), chopped almonds & chopped walnuts. For the dried fruit I use dried dates, cranberries & cherries. But again, anything can be used. I also like to toss in some shredded coconut. Also if you don’t have prune baby food then applesauce works as a substitute. The more ingredients you add to the recipe will require you to add a little bit of cook time. Have fun & get creative (as you can see I sprinkled some mini chocolate chips on some) or just stick straight to the recipe…either way they will turn out yummy.
